Vegetarian Spicy Black Bean Tacos

A quick & healthy taco recipe that never fails + it is vegetarian! Swap the sour cream for a plant-based alternative and exclude the feta cheese for a 100 % vegan recipe.

Ingredients

  • 1 can of black beans
  • 2 garlic cloves
  • 1.5 dl créme fraiche / sour cream
  • Freaky Sauces Lingon & Blueberry
  • 1 lime
  • Corn tortillas
  • 1 avocado
  • Cilantro for garnish
  • Feta cheese for garnish

Method



Step 1

Finely chop the garlic cloves and fry them in a small saucepan with neutral oil for a couple of minutes. Add the tin of beans with its water and bring to a simmer. Season with salt and pepper. Let it simmer for roughly 15 minutes until most water has evaporated. Semi-mash the black beans with your heavy utensil of choice.


Step 2

Make the sauce. Mix créme fraiche / sour cream with a dash of Freaky Sauces Lingon & Blueberry, zest of the whole lime, juice of half of the lime + salt, and pepper.


Step 3

Make tacos. Warm the tortillas and spread a spoonful of the black beans. Add two slices of avocado and a dash of the sauce. Garnish with chopped cilantro, crumbled feta, lime juice, and a touch more of Freaky Sauces Lingon & Blueberry.
