- 1 onion
- 2dl sour cream
- 5 tablespoons Freaky Sauces Lingon & Blueberry
- 1kg chicken thighs
- 1 tsp paprika
- 1 tsp cayenne
- 150g shredded cheddar cheese
- 150g shredded mozzarella cheese
- Tortillas
Method
Step 1
Slice the pepper and onion, and then chop the chicken thighs into small pieces.
Step 3
Sauté the chicken in a non-stick pan using neutral oil. Season it with cayenne, paprika, salt, and pepper. Once the chicken is nearly cooked, introduce the sliced peppers and onions, and cook them until they become charred and tender. Then, remove the mixture from the heat. In another bowl, combine the two varieties of cheese.
Step 4
Clean the pan and place it over low to medium heat. Drizzle a bit of neutral oil and assemble your quesadilla by stacking layers of cheese and the chicken mixture, then finish with an additional layer of cheese on top. Fold the tortilla in half and firmly press it down with a spatula. Cook for 4-5 minutes on each side, or until the tortilla turns crispy, and the cheese inside becomes warm and gooey.
