Halloumi Wrap with Mint Chutney

A filling and flavourful wrap without any meat, fully vegetarian. The use of Freaky Sauces Saffron & Rose adds a warm and floral touch to the mint chutney that brings the whole wrap together. Don't be scared of the long ingredients list, this wrap comes together really easy.

Ingredients

  • 250g halloumi
  • 1 red onion
  • 50g fresh spinach
  • 200g cauliflower
  • 1 can of chickpeas
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin
  • 1 teaspoon ground paprika
  • 5 tablespoons full-fat Greek yogurt
  • 1 lemon
  • 1 garlic clove
  • 1 small knob of peeled ginger
  • 20g fresh cilantro
  • 20g fresh mint leaves
  • Freaky Sauces Saffron & Rose
  • Flatbread

Method



Step 1

Make the chutney. In a mixer, food processor, or something similar, mix yogurt, garlic, ginger, cilantro, and mint leaves together with lemon zest and juice from ½ the lemon. Season with salt and pepper and add a dash of Freaky Sauces Saffron & Rose. Set aside in the fridge.


Step 2

Prep the halloumi and the veggies. Slice the halloumi and the red onion, and break the cauliflower into small florets.

Step 3

Fry the spices (turmeric, cumin & paprika) in a large nonstick pan with some neutral oil until toasted and fragrant. Add the halloumi and cauliflower. Drain the can of chickpeas and add to the pan.

Cook until the halloumi is golden and the chickpeas are a bit crispy, take halloumi and chickpeas out. Add a splash of water to the pan and cover with a lid for 30-45 seconds to fully cook through the cauliflower.

Step 4

Time to assemble. Get your flatbread of choice, and start with some fresh spinach and sliced red onions. Now add the halloumi, chickpeas, and cauliflower, and finish it all with the mint chutney. Wrap it up.
